
Gluten Free Berry Bread Pudding
Treat friends & family (and yourself) to a dazzling desert. Bread pudding is one of my favorite treats to enjoy all season long. With the holiday season so close, sweets can be your number one enemy, don’t fall into the holiday fat trap! When there is fruit involved I feel so much better about eating desert! (don’t you?) This recipe is simply divine and fantastically friendly to your waist line. For all my gluten sensitive friends and family (Valerie for you!) Now if you do not have a gluten sensitivity or milk allergy (milk & I are not friends) substitute with day old french or light bread of your choosing & low-fat milk, regular cooking spray & honey. See how simple that was!
Ingredients
3 eggs
1/2 cup sugar or substitute with Trulia
1/4 tsp.salt
1 1/4 almond milk
1 tsp vanilla
1/2 tsp.nutmeg
1/2 tsp. cinnamon
2 cups gluten free tapioca bread
1 cup of fresh or frozen berries, strawberries, blueberries, blackberries, raspberries (prefer fresh)
1 tbs of gluten free honey warmed and drizzled over each serving (yum)
1 tsp vanilla
1/2 tsp.nutmeg
1/2 tsp. cinnamon
2 cups gluten free tapioca bread
1 cup of fresh or frozen berries, strawberries, blueberries, blackberries, raspberries (prefer fresh)
1 tbs of gluten free honey warmed and drizzled over each serving (yum)
Directions
Preheat your oven to 350.
Beat eggs in a large bowl until nice & frothy.
Now add the next five ingredients and mix well until blended.
Then drop in bread cubes and fruit, let the mixture sit for about 15 minutes until the bread is well soaked.
Spray an 8″ pan with (gluten-free) or regular non-stick spray if you do not have a gluten allergy & then spread mixture in pan.
Bake 35-45 minutes in a water bath until just set in the center
Serves 9 ~ Enjoy!
