I have the best clients and yes I am bragging, I torture them over the internet and in person and they reward me with goodies. It’s a great life! My client today gifted me with these bad boys, behold the chocolate chunk flax muffin. Now I did not make these above (no way mine would look as pretty) I do however have the recipe for these delightful treats.
What You Need
1/4 cup Arrowhead Mills gluten-free all-purpose baking mix (oh forgot to mention they were gluten free)
1/4 cup ground flax seed
1/4 tsp baking soda
1 tsp ground cinnamon
2 eggs
1/2 tsp of Vanilla Extract
1 Tbsp melted coconut oil
1/2 cup dark chocolate chips (or less if you do not want as many chips)
What to Do
Preheat your oven to 350 degrees. Lightly grease a muffin pan or use muffin cups
Mix dry ingredients in a small bowl (baking mix, ground flax seed, baking soda, and cinnamon.)
Beat eggs in a medium-sized bowl. Add honey and melted coconut oil.
Next add dry ingredients into wet ingredients about 1/3 at a time until batter is well mixed.
Now add the chocolate chips to batter, mix gently, and divide batter into lightly greased muffin pan or muffin cups
Bake at 350F for 19 minutes. (Stick toothpick in them to check if done)
Remove from oven and allow to cool for 5-10 minutes.
Enjoy!
