It really is the little things in life, for myself fresh flowers always make me happy. A much-needed treat I never deny myself. They instantly make my home feel lighter and brighter…. and tulips for spring is my favorite kind of home bling (oh, look I am a poet!) Today my flower lady threw in a few extra flowers for me which just made me feel so special. For a personal trainer always on the go, this week has been kind of slow… (again with the rhyme) Spring break is happening and clients are on vacation, you would think its a nice break, but I so love being busy & I don’t know what to do with myself. While I had some free time, I decided to come up with a new healthy snack for myself and my clients. I am sharing it all with you & hope you like it (pictured above).
What You Need:
Raisin Toast, (a healthy brand or whatever kind of bread you prefer)
Plain Greek Yogurt
Honey (to drizzle under or on top of the yogurt)
Assemble like above and enjoy! Trust me it’s super yum!

I have the best clients and yes I am bragging, I torture them over the internet and in person and they reward me with goodies. It’s a great life! My client today gifted me with these bad boys, behold the chocolate chunk flax muffin. Now I did not make these above (no way mine would look as pretty) I do however have the recipe for these delightful treats.
What You Need
1/4 cup Arrowhead Mills gluten-free all-purpose baking mix (oh forgot to mention they were gluten free)
1/4 cup ground flax seed
1/4 tsp baking soda
1 tsp ground cinnamon
1/2 tsp of Vanilla Extract
1 Tbsp melted coconut oil
1/2 cup dark chocolate chips (or less if you do not want as many chips)
What to Do
Preheat your oven to 350 degrees. Lightly grease a muffin pan or use muffin cups
Mix dry ingredients in a small bowl (baking mix, ground flax seed, baking soda, and cinnamon.)
Beat eggs in a medium-sized bowl. Add honey and melted coconut oil.
Next add dry ingredients into wet ingredients about 1/3 at a time until batter is well mixed.
Now add the chocolate chips to batter, mix gently, and divide batter into lightly greased muffin pan or muffin cups
Bake at 350F for 19 minutes. (Stick toothpick in them to check if done)
Remove from oven and allow to cool for 5-10 minutes.

Plank jacks are an awesome cardio move alone but add in the dolphin hop and you get double bang for your buck so to speak; this move raises the heart rate while working both your lower and upper body. You get a full body workout and it will have you sweating in no time… drop those phones, (well don’t really drop them) and do something good for yourselves.
Begin in plank position, with your shoulders over your wrists, your body should be in a straight line, and your feet together.
Just like the motion of a jumping jack, jump your legs wide and then back together 3 times, than proceed to do three little hops until you are in a pike position then jump your feet back out with 3 little hops of if you choose one hop back into plank position. Repeat for 30 to 60 seconds.
Want to try something else? Go Tabata style 4 to 6 times 20 seconds on and 10 seconds of rest. Make it harder: 8 to 10 times
Make it easier: Walk your feet in and out and walk your feet up into pike than proceed to walk feet back out to starting position. The move can be modified for your fitness level.
Tip: be sure and keep your abs pulled in tight, do not let your hips drop.

and that is good enough for everybody! It’s Friday afternoon…2PM I get a craving for something sweet, especially after a cup of hot relaxing tea. As I sit comfy and cozy while finally getting to read a few of my favorite magazines (started that a few days ago forgetting I had to be somewhere) my stomach lets me know it needed a snack and my brain told me sugar and sweet. Behold the grilled Nutella and strawberry sandwich! Easy, healthy for the most part and super amazing tasty (that I promise). All you need is….
Your favorite bread
I slightly toast my bread in the pan first then spread on the Nutella and place the strawberries on the Nutella side of the bread. Place sandwich back in pan, Just an FYI I used no butter or cooking spray I like my bread crunchy and dry. Let bread toast for a minute or so on each side. Cut in half or shove the whole thing in just the way it is! Enjoy. XOXO
